Brownies are a big hit with everyone, young and old, and it's good to know you can have a batch on hand with just 20 minutes preparation time - ideal for dessert if you have some unexpected guests popping over for dinner!
Variations on the basic brownie recipe
This is a simple and traditional brownie recipe and our personal favorite. But the great thing about brownies is that it's so easy to change up the recipe a little and customize them to suit your family!
Here are some ideas.
Add nuts
Pecans are the typical choice - but walnuts or even peanuts work well too. Another idea is to use finely chopped hazelnuts - they're surprisingly good!
Top with frosting
Everything tastes better with frosting and brownies are no exception! You can use either a simple vanilla or chocolate frosting, or for a slightly different flavor opt for a cream cheese frosting instead.
Make mocha brownies
Just use the recipe for easy brownies (below) and add a mocha frosting.
To make mocha frosting, mix 1 teaspoon instant espresso with 1 tablespoon water. Beat the mixture together with 1 1/4 cups of confectioner's sugar and one stick of butter.
Add toppings
There are lots of different things you can use to top brownies, including shredded coconut, M&Ms, sprinkles or just confectioner's sugar. Spread a thin layer of frosting first to help your toppings stick.
Another idea is to sprinkle the surface of the brownies with mini marshmallows as soon as you take them out of the oven. You can pop them under the broiler to toast them lightly and give them a lovely caramelized color.
Turn them into cake pops
Just cut the brownies into small cubes, insert sticks and dip into melted chocolate. Push the cake pops into a styrofoam block to hold them up as the melted chocolate dries.

Easy Brownies
Ingredients
- 2 sticks Unsalted Butter, plus more for greasing the foil
- 1 1/2 cups All-Purpose Flour
- 1/3 cup Unsweetened Cocoa Powder
- 1/2 teaspoon Fine Sea Salt
- 4 ounces Semi-Sweet Chocolate, chopped
- 2 cups Granulated Sugar
- 4 large Eggs, lightly beaten
Directions
- Preheat your oven to 350 degrees F.
- Take a 9" x 13" baking pan and line it with foil, allowing 2" to hang over at least 2 of the sides.
- Grease the foil with butter.
- In a medium bowl, whisk together the flour, cocoa powder and salt.
- Place a saucepan over a medium heat and put in the butter and chocolate. Stir frequently until melted.
- Allow to cool slightly, then stir in the sugar and eggs.
- Add the flour mixture and stir well until combined.
- Pour the batter into the baking pan and place into the oven.
- Bake for around 30 to 35 minutes. When the brownies are ready, a toothpick inserted into the center should come out with just a few crumbs.
- Allow the brownies to cool completely in the pan, set on a cooling rack.
- When cool, lift the brownies from the pan, using the foil overhang to help you.
- Cut into 16 squares.
- The brownies can be kept for up to 3 days in an airtight container at room temperature.
